Your clean eating guide should include food that you love and tastes good. A common misconception is that eating clean means you give up food you enjoy. Eating food that’s good and good for you just takes an open mind and a little effort. Here’s a few options to revamping your Taco Tuesday, with alternative taco options.
Sweet Potato
Kinda sweet, just a little savory but most importantly good
- Cube some sweet potatoes.
- Place them onto a prepared baking sheet
- Add sliced mushrooms
- Drizzle with olive oil
- Sprinkle on spices: Paprika, cumin, chili powder, onion powder, garlic powder, salt, pepper
- Bake
- Place into gluten free taco shells
- Top with avocado and citrus aioli
Brussel Sprout
Favored for their texture and simplicity all while packing a satisfying flavor

- Sautéed Brussels Sprouts in 2 tablespoons of olive oil, some dry taco seasoning, 2 tablespoons water
- Add black beans, drained and rinsed
- Place into cauliflower taco shells
- Slice avocado
- salsa of your choice
BBQ Jackfruit
For when you’re looking for a taco with some familiar ingredients with just a little less fat and calories

- Shred jackfruit
- Prepare in 2 Tbsp avocado oil
- With white thinly sliced onion, 4 minced cloves garlic, 1/2 tsp sea salt, 1 Tbsp ground smoked paprika, 1 Tbsp ground cumin, 1 Tbsp chili powder, 2-3 Tbsp organic brown sugar, 1-2 small chipotle peppers (roughly chopped), 2/3 cup water (plus more as needed), 3 Tbsp lime juice
- Serve with corn tortillas
- Add avocado, radishes, cilantro leaves, shredded red cabbage
- Optionally add sour cream and lime
